1¼ c. of flour
1 tsp. baking soda
½ tsp. cinnamon
½ tsp. salt
2 sticks unsalted butter, softened
¾ c. sugar
¾ c. packed brown sugar
1 tsp. vanilla extract
3 c. old-fashioned oats
11 oz. package butterscotch chips

Preheat oven to 375º. Grease 9" x 11" baking pan and set aside. Combine flour, baking soda, eggs, and vanilla extract in a large bowl. Beat butter, eggs, and vanilla extract in a large bowl. Add flour mixture and then stir in oats and butterscotch chips until well blended. Spread dough in pan.
Bake for 18 to 20 minutes or until golden brown. Cool completely and cut into bars.
