2 T. olive oil (divided)
3 red potatoes (1/4" thick)
1/4 c. parsley (minced)
3 cloves garlic (minced)
2 whole split chicken breasts
kosher salt and ground black pepper
1 large red onion
3 T. balsamic vinegar

Directions:
Directions:
Preheat oven to 375º. Pour 1 T oil into a baking dish. Arrange potato slices in the bottom of the dish. Mix parsley and garlic together in a small bowl. Season underside of chicken with salt and pepper. Brush with parsley and garlic mixture. Place chicken on top of potatoes in the dish. Arrange onion wedges around chicken. Drizzle remaining 1 T olive oil and balsamic vinegar over chicken. Bake in the preheated oven, basting occasionally with juices, until the chicken reaches 165º about 30 minutes.
