18 small white boiling onions
3 tbsp. butter
3 tbsp. flour
11/2 cups milk
1/2 cup chopped parsley
1/4 tsp. paprika

Directions:
Directions:
To prevent weeping, cook the onions in there skins until tender, twenty minutes or longer. Drain and peel.

In a sauce pan melt the butter, add the flour and stir with a wire whisk, until blended.
Meanwhile bring the milk to a boil and add alll at once to the butter flour mixture, stirring vigorously with the whisk until smooth and thickened . Season the sauce with salt and pepper and add to the onions. Sprinkle with the parsley and paprika. If you like thyme you may add a teaspoon at this time and omit the paprika.
Reheat and serve hot
