2 eggs
2 cups sugar
½ cup oil
1 teaspoon vanilla
2 cup flour
½ teaspoon salt
1 teaspoon soda
2 teaspoons cinnamon
½ teaspoon nutmeg
4 cups raw apples, peeled and diced

Directions:
Directions:
Beat eggs, adding sugar gradually; add oil and vanilla; blend dry ingredients and add to egg mixture which will then be like cookie dough. Add apples. Pour into greased and floured pan and bake at 350 degrees for 30-35 minutes or until it springs back when touched in center and pulls slightly away from pan.


TOPPING:

1 package (3 ounce) cream cheese
3 tablespoons butter
1½ cup powdered sugar
vanilla

Blend ingredients and spread on cooled, baked cake.
