1 1/2 pounds ground turkey (ground beef can be substituted)
1/3 cup chopped onion
1 package low sodium taco seasoning mix
1 Tablespoon cumin
1 Tablespoon chili powder
1 Tablespoon crushed red pepper (can be adjusted depending on your heat level preference)
1 Tablespoon powdered ranch dressing mix
1 can (15 oz) chili beans
2 cans (14.5 0z) original flavor Rotel
1 can (4 oz) chopped green chilies
1 can (4 oz) chopped jalapeņos
1 can (15 oz) sweet corn
4 cups low sodium chicken broth

Directions:
Directions:
Brown turkey and onion for about 5 minutes or until onion is translucent. Drain fat and stir in taco seasoning mix, cumin, chili powder, crushed red pepper and ranch dressing mix. Spoon into slow cooker. Add remaining ingredients and stir well. Cover and cook on low 6 to 7 hours.

This soup is the ultimate comfort food. I serve with Mexican cheese, tortilla chips and a dollop of sour cream. Excellent for freezing, too. Many times I'll make 2 batches at once for freezing purposes only.
