2 cups buttermilk baking mix
2/3 cup milk
Tomatoes enough to fill cavity(about 3 or 4 large)of the pie, peeled and thinly sliced
Chopped chive or onion
Fresh basil
1 cup sharp cheddar, grated
1 cup mayonnaise

Directions:
Directions:
Mix buttermilk mix and milk with a fork . Lightly grease a 10" pie pan and press dough into the pie pan
Layer of tomatoes, layer of basil, sprinkle of chive or onion. Season with salt and pepper to taste.
Add a layer of tomatoes and mix cheddar and mayo together and spread over top, being careful to cover a the tomatoes
Bake at 400º for thirty minutes until golden


To Peel tomatoes, place in a bowl and cover with boiling water. Let set a couple of minutes. Dip in cold water, skins will split, then peel .
