1/4 cup unsalted butter
1 cup chopped yellow onion
1/4 cup all purpose flour
1 teaspoon dry mustard
3 cups low sodium chicken broth
1 cup chopped carrots
3 cups Yukon Gold potatoes - cut in 1/2" pieces
2 cups half & half
3 cups Cougar Gold cheese - cut in small chunks
Ground pepper
Salt

Directions:
Directions:
In large soup pot, saute onion in butter for 5 minutes or until translucent. Stir in flour and mustard, cooking several minutes while stirring constantly. Add chicken broth, whisk until smooth. Add carrots and potatoes. Cook on medium heat for 45 minutes. Add half & half and cheese; stir until melted. Season with salt and freshly ground pepper.

This is a real crowd pleaser. Serve with a salad and crusty bread and you've got a complete meal. The Cougar Gold gives it incredible flavor. If not found in stores, can be ordered online at www.cougarcheese.wsu.edu. Can be stored indefinitely, under refrigeration.
