1½ lb. chicken thighs and legs
2 cloves of garlic, cut and chopped.
Rosemary
Oregano
6 capers
1 c. white wine (or red if you prefer.)
sliced fresh mushrooms

Directions:

Total Cooking time - 1 hour

Put a little oil in the bottom of 1 or 2 skillets. Place chicken in pan and salt and pepper.

Add garlic.

Sprinkle chicken with rosemary and a generous amount of oregano.

Cut 6 capers and add to chicken. Fry with pan covered until skin browns. Turn chicken to brown on all sides. This usually takes 30 mins.

Add 1 c. wine ( I usually use white, but you can use red if you prefer). Simmer covered until wine thickens. Add chopped fresh mushrooms for the last 10 mins.
