1/2 c. mayo
1 c. granulated sugar
3 eggs, beaten
3 ripe bananas, mashed
1/4-1/2 c. chopped nuts
1/2 c. chocolate chips
2 c. all purpose flour
1 tsp baking soda
3/4 tsp salt
1/4 c. maraschino cherries

Directions:

Grease two regular loaf pans. Preheat oven to 350º.

Cream together the mayo and white sugar. Mix in beaten eggs and mashed bananas. In a separate bowl, sift (or whisk) together the flour, baking soda, and salt. Mix the flour mixture into the wet mixture. Fold in the chopped nuts, chocolate chips, and cherries. Only fill the loaf pan 2/3 full as the dough will expand during cooking.

Bake at 350º for 1 hour. Done when a toothpick comes out clean when inserted in the center of the loaf. Allow to cool for 10 minutes before removing from the pan.
