1 large pork shoulder roast or butt, trim fat
1-2 onions, coarsely chopped
1 jar of Trader Joe's green salsa (or green enchilada sauce of your choice)
2-3 cloves garlic
salt and pepper to taste
cilantro, chopped

Directions:
Directions:
Place the meat in the crockpot. (I like to add a little oil to the bottom of the crockpot). Pour on the onions, enchilada (green) sauce, garlic, salt and pepper and cook on low all day. Drain meat, shred with two forks. Add back in a little of the broth and onions, and serve. Delicious as taco meat, or over rice with cilantro garnish on top.
