4 c. shredded cooked chicken
4 c. store bought salsa verde
8 oz. grated Monterey Jack cheese
¼ to ½ c. fresh sofrito (puree of garlic, onion, pepper, and cilantro)
salt and pepper
16 corn or flour tortillas
scallions
1 container light sour cream

Directions:
Directions:
Heat oven to 400º. Mix chicken with ¾ c. salsa, 1½ c. cheese, ¼ to ½ c. of sofrito and set aside. Line a 9" x 13" baking dish with aluminum foil. Spray foil with cooking spray. Spread 1 c. salsa on bottom of baking dish. Spoon chicken mixture into tortillas and place seam side down in baking dish. Do not overcrowd as they will stick together. Cover baking dish with foil, oil side down and bake about 30 minutes until heated through. Remove foil and sprinkle with chopped scallions. Let stand for a few minutes then serve with sour cream and remaining salsa verde.
