2 C. All Purpose Flour (sifted)
2 C. Sugar
1 tsp. Soda
1 tsp. Salt
1 C. Cooking Oil plus 1 Tbsp
4 Eggs
3 C. Grated Carrots
1 tsp. Cinnamon

1. Sift together in a bowl flour, sugar, soda, and salt.
2. Beat in cooking oil and eggs (one at time.)
3. Stir in carrots and cinnamon.
4. Bake in three 8" pans or a 13"x9" pan for 25-30 minutes at 350º in preheated oven

Cream together
1 Stick Butter (softened)
1 (8 oz). Pkg. Cream Cheese
1 lb. Confectioners Sugar
1 C. Chopped Walnuts
Enough milk to make frosting spreadable

Frost cooled cake. Refrigerate leftovers.
