-2 pounds fresh strawberries
-1/2 cup granulated sugar
-1/2 teaspoon vanilla
-2 teaspoons lemon juice
Topping Ingredients
-4 ounces mascarpone cheese
-1.5 cups heavy whipping cream
-2 tablespoons granulated sugar
-seeds from 1 vanilla bean
-3/4 cup salted pistachios

Rinse the strawberries and cut them in half. In a bowl stir the strawberries, vanilla, lemon juice and sugar. Puree in a blender. Keep some smooth and some chunky for texture. Cover and refrigerate for 30 minutes or several hours.

Toppings
Mix heavy whipping cream, mascarpone cheese, sugar, seeds, and vanilla bean seeds. Whip mixture. Set aside in the refrigerator. 5 minutes before serving toast the pistachios in a saucepan on medium heat for 2 minutes, stirring to keep them from burning.

Serve the chilled soup in a cup approx 3/4 full. Add a swirl of the masarpone on top with a sprinkle of the pistachios.
