4 cups pitted tart cherries fresh or frozen
1 1/2 cups sugar
1/4 cup corn starch
1 tsp lemon juice
dash of salt
2 prepared pie crusts

Directions:
Directions:
If using frozen cherries: Combine 1/2 cup sugar with cornstarch. Stir in juice from thawed cherries. Cook over medium heat until mixture thickens and bubbles. Add remaining 1/2 cup of sugar, cherries, lemon juice, and dash of salt. Mixture will be very thick. Pour into 9" pie plate lined with prepared pie crust. Top with second crust, crimp edges, and cut slits in top so steam can escape. Sprinkle with sugar. Bake at 400º for 45-50 minutes or until crust is golden brown.

If using fresh cherries there will be no juice, just mix cherries with sugar, corn starch, lemon juice, and dash of salt. Pour into 9" pie plate lined with prepared pie crust and follow remaining directions above.
