1/4 cup all purpose flour
1/2 tsp salt
1/4 tsp ground black pepper
1/2 tsp oregano
4 chicken breasts
4 Tbsp butter
4 Tbsp olive oil
1 cup sliced mushrooms
1/2 cup marsala wine
1/4 cup cooking sherry
chicken broth

Directions:

Pound chicken breasts until thin. Mix flour, salt, pepper and oregano in a shallow dish. Coat chicken in flour mixture. In a large skillet, melt butter in oil over medium heat. Place chicken in pan and lightly brown. Turn chicken over and add mushrooms. Pour in wine and sherry. Add chicken broth, one cup at a time. Simmer 20 minutes or more, adding chicken broth as needed. I simmer longer and keep adding broth for a tastier and more tender dish.
