Cranberry-Orange Nut Bread Recipe

4 cups flour ( you could use whole-wheat flour for half)
1 & 1/2 cups sugar
1 Tbsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs, beaten
1 & 1/2 cups orange juice
1/3 cup oil
1 cup walnuts (or pecans) chopped
2 cups cranberries, chopped
1 Tbsp grated orange peel

Directions:

Blend dry ingredients in large bowl.
Beat eggs, orange juice and oil together. Add this to dry ingredients, stirring just until moist.
Stir in cranberries, nuts and peel. Pour into 2 greased and floured 9x5x3 inch pans.
Let stand 8-10 minutes while oven heats.

Bake at 375º for 55-60 minutes. Test with wooden toothpick after 50 minutes-- bake until tp is clean.

Cool on a wire rack, turning out of the pans while still warm, and let cool completely.

Wrap in plastic wrap or foil when finished.

(If you want to make this for gifts, use several small loaf pans and bake accordingly.)

This is my favorite holiday bread. I like to slice it and make cream-cheese sandwiches. It is so pretty.
