Ingredients: 1 flopped Pesach cake, any kind (I prefer brownies) 10 eggs 1¼ C. sugar ¾ C. oil 2 packets vanilla sugar (optional) ¼ C. cocoa 1 7-oz. bar pareve chocolate, grated ½ C. coconut or ground nuts for topping

Directions:Crumble the cake with your hands. Par enough crumbs into the bottom of a deep 9x13 pan OR a deep 11-inch disposable pie pan so that the bottom is completely covered. Reserve extra crumbs for later. Separate the eggs; beat the whites on high with an electric mixer until white and foamy. Lower the mixer speed ans add half the sugar (½ C. + 2 T.). Beat until it forms stiff peaks. In a separate bowl, beat the egg yolks with the mixer. As they thicken, add the rest of the sugar. Add oil and vanilla sugar, if using. Fold together both batters. Pour half of the mixture on top "crust". Freeze for 30 minutes(and meanwhile refrigerate remaining batter). Mix the cocoa and chocolate shavings into the remaining batter. Remove ice cream from freezer and top with another layer of crumbs, then pour the rest of batter over it. Freeze overnight. Sprinkle pie with remaining crumbs mixed with ground nuts or coconut. (If you do not have any crumbs left. you can top with coconut, nuts and/ or additional grated chocolate). Cover well and freeze until ready to serve. |
