1-1/4 cups flour
1-1/2 tsp baking powder
1/4 tsp salt
1/3 cup shortening
2/3 cup sugar
1 egg
1 tsp vanilla
1/2 cup orange juice

TOPPING

1/4 cup oleo
1/2 cup brown sugar
8 slices pineapple
9 cherry halves
9 pecan halves

Melt butter in skillet over low heat, add brown sugar and stir until well blended and bubbly. Pour into 2-qt cake dish, spreading over bottom. Put pineapple, cherry halves and pecan halves on top of sugar mixture. Chill in refrigerator while preparing batter.

BATTER:

Sift flour, baking powder and salt.

Cream shortening and sugar. Add eggs and vanilla. Beat smooth.

Beat in flour (in fourths, alternate with orange juice, beginning and ending with flour mixture). Serve warm.

Bake at 325º for 40 minutes.
