2 egg whites
½ C. sugar
2 C. ground almonds
1 heaping T. cinnamon
¼ C. confectioner's sugar for coating

Directions:
Directions:
Beat the egg whites until small peaks form. Gradually add sugar. Beat until stiff and shiny. Fold in almonds and cinnamon. Form balls with wet hands and then line up on cookie sheet. Press the center of the cookies with your thumb. Bake at 350º for about 20 minutes. The bottoms should be light brown but don't overbake them because you want them soft. Roll in confectioner's sugar and let cool.
