3 c. cooked quinoa
2 c. shredded Colby Jack cheese (divided)
2 c. cooked chicken shredded or cubed
1 15 oz. can black beans rinsed & drained
1 c. whole kernel corn (or two ears cooked and cut off the cob)
1¼ c. BBQ sauce & more to drizzle over the top
garnishes (optional) chopped cilantro, chopped green onion, diced avocado, sour cream

Directions:
Directions:
Pre-heat oven to 375º.
In large bowl, stir together quinoa, 1½ c. cheese, chicken, black beans, corn & BBQ sauce.
Put mixture in a baking dish and sprinkle with remaining cheese.
Bake 15-20 minutes.
Remove from oven and drizzle with a little extra BBQ sauce.
Top as desired with optional garnishes.

* I cook the quinoa in 2 c. chicken broth for added flavor.
