8 slices of bacon cooked and crumbled
1 28 oz can of pork and beans
1 15 1/2 oz can of chili beans undrained
3/4 C finely chopped onion
1/2 C packed dark brown sugar
1 8oz can of enchilada sauce
1 T flour
2 teaspoons of chili powder
1 teaspoon of cumin
1/8 teaspoon of garlic powder
1 C ( 4oz) of shredded Monterey Jack cheese

Combine all ingredients except cheese: mix gently. Place in a greased 2 qt. casserole dish. Bake, uncovered, at 475º for 15 minutes. Reduce heat to 375º, and bake for 30 minutes stirring occasionally. Sprinkle with cheese; bake 15 minutes longer.
