2 cloves garlic, minced
3 cups cauliflower rice (i get mine from Trader Joes in the freezer section)
2 handfuls of spinach, chopped
8-10 leaves of basil, chopped
1 tomato, diced
red onion, diced
fresh mozzarella, diced

Directions:
Directions:
Sautee garlic for 1-2 min. Add cauliflower rice and cook for 3-4 min. Season with salt and pepper. Add spinach and cook until slightly wilted then add basil, tomato, red onion, and mozzarella and cook until cheese is melted.

Balsamic Reduction: simmer 1/2 cup balsamic vinegar with 1 tbsp honey. Simmer until thickened, stirring often so it dosen't burn.
