Cupcakes:
4 eggs
1 c. oil
1 ½ c. sugar
½ c. cocoa
½ c. potato starch

Frosting:
¾ c. of margarine
2 egg yolks
1 T. vanilla extract
2 ¼ c. confectioners sugar

Directions:
Directions:
1. Preheat the oven to 350ºF. In the bowl of a mixer, combine the eggs, oil, sugar, cocoa, and potato starch. Pour batter into cupcake holders and bake for 20 to 25 minutes.
2. To prepare frosting, in the bowl of the mixer, combine the margarine, egg yolks, vanilla, and confectioners' sugar. Frost the tops of the cupcakes, then dip in sprinkles or topping of your choice.
