Basic Pizza Crust:
1 cup warm water
1 packet yeast (2 Tbsp)
2 Tbsp olive oil
½ tsp salt
3 cups unbleached flour

Can be mixed in a bread maker, if desired; just take it through the first rising and punch down.
Otherwise, mix the ingredients; dough will be sticky. Knead dough until it is no longer sticky.
Place dough into a bowl, coated in oil. Cover the bowl and allow the dough to rise for about 2 hours
or until doubled in size. Punch it down. Now the dough is ready to be used for pizza or bread sticks.

Basic Pizza Sauce:
1 medium onion, chopped
1 clove garlic, minced
1 tsp dried basil
1 bay leaf
2 Tbsp olive oil
1 tsp dried oregano or marjoram
Freshly ground pepper
1 (28 oz) can Italian-style tomatoes, packed in puree (if packed in juice, add 2 Tbsp tomato paste)

In a 2-quart saucepan, lightly sauté the onions in the olive oil over medium heat until translucent. Coarsely chop the tomatoes, then add the tomatoes and puree to the sautéed onions. Add the garlic and seasonings and bring to a simmer. Stir occasionally to prevent the sauce from sticking to the bottom of the pan and burning. Lower the heat and simmer the sauce uncovered for about 20-30 minutes. For a spicier sauce, add red pepper flakes or cayenne to taste.
