1 (8 oz) package cream cheese
2 Tbsp Dijon mustard
3 green onions, chopped
¼ cup zucchini, shredded
1 (12 oz) jar whole sweet roasted red peppers, drained & patted dry
¼ cup carrot, shredded
12 large spinach leaves
¾ pound thinly sliced deli turkey
6 to 8 flour tortillas

Mix together cream cheese and mustard in bowl. Chop green onions and shred zucchini and carrots. Add these three things to the cream cheese mixture. To assemble the tortilla rolls, spread each tortilla with about ¼ cup cheese mixture to within ½-inch of edge, using a spatula. Cover with 2 or 3 spinach leaves, pressing lightly into cream cheese mixture. Top each with 1 or 2 pieces of red pepper and 2 slices of turkey. Roll up tortilla tightly, jelly roll fashion. Wrap in parchment paper. Refrigerate one hour. To serve, cut each roll crosswise into 1-inch slices.
