2 tsp butter
1/4 cup chopped green onions
1 cup white or brown Basmati rice
1 1/2 cups sparkling wine also know as champs
2 cups chicken broth
1/2 pound bay scallops
1/4 freshly grated parmesan cheese
Salt and pepper to taste

Directions:
Directions:
Melt butter in medium size saucepan over medium heat
Add onions and saute for 1 minute
Add rice and saute for about 2 minutes
Add sparkling wine, simmer until almost all liquid evaporates, stirring often
Add chicken broth, simmer until rice is almost tender, about 15 minutes
Add scallops, simmer until scallops are cooked through and rice is tender but still firm
Add parmesan cheese, salt and pepper

Enjoy with a glass of bubbly!
