4 large potatoes (I like Yukon Gold or Red Bliss) sliced into 1/4" slices
1 onion sliced into thin rings
salt/pepper
3 T butter
3 T flour
1/2 tsp. salt
2 cups milk (or half milk, half heavy cream)
1 1/2 cups shredded cheddar

Directions:
Directions:
Preheat oven to 400º. Butter a one quart casserole dish. Layer halfway with potatoes, top with onions, then add remaining potatoes/onions. Melt butter, add flour and salt and cook for several minutes until flour is lightly browned. Stir in milk/cream and cook until thickened. Stir in cheese until melted. Pour over potatoes, making sure sauce goes throughout. Cover with foil. Bake 1 1/2 hours.
