3 cups flour
2 tsp. baking soda
1 tsp. salt
½ tsp. ground cinnamon
¾ cup chopped walnuts
3 eggs beaten lightly
2 cups sugar
1 cup vegetable oil
2 tsp. vanilla
2 cups coarsely shredded zucchini
1 8 oz. can crushed pineapple, drained

Directions:
Directions:
Combine flour, soda, baking powder, salt, cinnamon and nuts. Set aside. Beat eggs, sugar, oil and vanilla. Beat until creamy. Hand stir in zucchini and pineapple. Add dry ingredients stirring only until dry ingredients are moistened. Spoon batter into 2 well greased 9 x 5 x 3 loaf pans, coated with flour. Bake at 350º for 1 hour. Cool 10 minutes before removing from the pans and onto a rack to cool completely.
