1 medium onion, chopped
1 medium green pepper, chopped
¼ c. butter or margarine
4 c. diced cooked potatoes
4 c. diced cooked chicken
1½ c. picante sauce
2 tsp. cumin (do not omit this)
½ tsp. salt
2 c. shredded monterey jack or cheddar jack cheese

Additional picante sauce for serving
tortilla chips
shredded lettuce

Directions:
Directions:
Saute onion and green pepper in butter. Stir occasionally.
Add potatoes, chicken, picante sauce, cumin and salt.
Simmer 5 minutes.
Top with cheese and cover with a lid until the cheese melts.
Serve with additional picante sauce and tortilla chips on shredded lettuce.

(I usually skip the lettuce and use the tortilla chips to scoop up the chicken mixture).
