4 Tbsp. butter
2 Tbsp. olive oil
2 lbs onions or 7 cups
1 tsp. salt
3 Tbsp. flour
2 quarts beef stock
1 garlic clove
1 tsp. sugar
parsley
thyme
1 cup white wine
splash of cognac

French bread
Swiss cheese

Directions:
Directions:
Cook onions in olive oil until translucent. Add garlic and salt and cook an extra couple of minutes.
Melt butter; add flour. Cook at low heat for a couple of minutes. Add beef stock and the remaining ingredients.
Simmer for 1 hour or longer.
Ladel into oven safe soup bowls. Place one slice of French bread on top and cover with a thick layer of cheese.
Place soup bowls on a cookie sheet in the oven and bake at 350 degrees until hot and bubbly and cheese is golden brown.
