2 Cups of Oats
2 1/2 Cups of Buttermilk

---Refridgerate overnite or for 2 or more hours --------

2 Eggs, lightly beaten
1/4 Cup Coconut Oil, Melted and cooled a bit (mix with eggs)
I added a mashed banana.... not necessary though.

1/2 Cup All Purpose Flour
2 TBSP Sugar
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp ground Cinnamon
1/4 tsp Salt

Mix wet with Dry only just before ready to cook in pan with melted coconut Oil.

I use an ice cream Scoop to scoop approx. 1/3 Cup of batter on to griddle. Make sure griddle is good and hot greased with melted coconut oil. Wait for bubbles to appear on the outer edge and check to flip at that time.
