2 tbsp melted butter or oil
1/2 cup sugar or 1/4 cup truvia
1 egg
2 tsp lemon extract
2/3 cup almond milk plus 2 tbsp
1 cup brown rice flour
1/4 cup coconut flour
1 tbsp baking powder
1/4 tsp salt

Directions:
Directions:
Preheat over to 350. Mix butter and sugar then beat in egg. Add lemon extract and milk, and stir to combine. Mix flour, baking powder, and salt together. Add to wet ingredients and stir gently until just combined. Fill muffin tins 2/3 full with batter. Bake 10-12 min
