3 c. sugars
8 eggs
½ c. cocoa
pinch of salt
7 T. potato starch
2 bananas, mashed (1 cup)

Directions:
Directions:
Preheat oven to 350º. Line 16 muffin tins with paper cupcake holders. Using an electric mixer, combine the oil and sugar. Add each egg separately, mixing to combine after each addition. Add the cocoa, salt, potato starch, and bananas and mix together. Fill each cupcake holder to the top with batter. Bake at 350º for 30 to 40 mintutes, or until a toothpick inserted in the center comes out clean.
