4 tilapia fillets
½ c. potato starch or almond flour
1 t. salt
½ t. black pepper
2 T. olive oil, separated

Directions:
Directions:
Place 1 T. of oil in a small bowl, and have a pastry brush ready. Combine potato starch or almond flour with salt and pepper. Coat each fillet. Heat 1 T.of oil in skillet. add fillets and cook for about 4 minutes on each side. When the fillets are on their second side, after cooking for 3 minutes, brush some oil on each fillet.
