Ingredients: 1½ cups herbed goat cheese or two 5oz containers semi-soft cheese with garlic and herbs (I add a few Tbsp. of whipping cream and beat with a mixer) 6 tsp. prepared horseradish (I use only 1 tsp.) 2 Tbsp. finely chopped green onion 1 17¼ oz pkg. frozen puff pastry (2sheets) thawed. Do not roll ! 1 Tbsp. milk 1 large English cucumber or baby cukes, very thinly sliced 10 radishes, very thinly sliced Flavored salt or sea salt

Directions:1. In a medium bowl combine goat cheese, horseradish, and green onion (or other spices of your choice). Cover and chill until ready to use. 2. Preheat oven to 375ºF. Unfold one of the puff pastry sheets on a lightly floured surface. With the tines of a fork, generously prick pastry. Use a 2-inch round cutter (spice cap lids work !) to cut pastry into circles. Transfer circles to an ungreased baking sheet. Brush pastry lightly with milk. Sprinkle with salt, if desired. Bake for 10 to 12 min. or until golden brown. Cool on wire rack. 3. Use a knife to split the baked pastries horizontally. Spread (I put the cheese mixture into a zip lock baggie and cut the end and pipe the cheese onto the pastry) about 1 tsp. of the cheese mixture onto the cust side of each bottom pastry. Top with cucumber and radish slices. Spread the cut side of each top pastry with about 1 tsp. of the cheese mixture. Place on top of radish and cucumber slices. |
