Springtime Chicken

4-6 chicken breasts
salt and pepper to taste
½ cup (or more) dry white wine
¾ tsp. tarragon
1 large clove garlic
3 - 4 tbsp. grated parmesan cheese

Directions:
Directions:
Season both side of chicken breasts with salt and pepper. Mix wine, tarragon and garlic. Add chicken; marinate at room temperature for 1 hour, turning occasionally.

Place in greased 10 x 6 x 2 baking dish. Pour on marinade. Sprinkle with cheese and very lightly with paprika.

Bake uncovered in a pre-heated 325° oven for 30 – 35 minutes or until tender.

Serve on Mushroom Rice Pilaf and garnish with parsley sprigs.
 

Mushroom Rice Pilaf


Ingredients:

1 cup white rice
1 tsp. salt
1/2 pound (or more) sliced mushrooms
5 large green onions, white parts only, sliced (1/2 cup)
1/4 cup butter or margarine
2 cups chicken broth

Directions:
Directions:
Place rice and salt in a greased, deep 2 quart casserole dish; set aside.

In a large saucepan, sauté mushrooms and onions in butter until tender, stirring occasionally. Add broth and bring to a boil.

Pour over rice and stir.

Bake in a pre-heated 325° oven for 25 – 30 minutes or until rice is tender and liquid is absorbed.

Let stand covered for 5 minutes. Fluff with fork.
