5 lbs. potatoes (pare and quarter)
6 oz. cream cheese
1 cup sour cream
2 tsp. onion salt
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Directions:
Directions:
Cook potatoes in salted water; drain and mash. Add cream cheese, sour cream, onion salt, salt & pepper. Beat until smooth & creamy. Place in greased casserole dish; Dot with butter and Bake at 350º for 30 min. or until heated through.

I make double recipe for Christmas dinner and it all goes! I make it the day before to make it easier to get everything done. They are called "refrigerator" mashed potatoes because they can be made ahead and then you can put serving size or two in the microwave when you need a quick side (Considered great by visiting college students stopping in unexpectedly for a meal.)
