1st Layer:
¼ cup chopped onion
¼ cup chopped green pepper
1 Tbls. dried Chives
1 can sliced mushroom stems and pieces, drained
1 cup cubed ham (or bacon or sausage)
¾ cup Mozzarella cheese
¼ cup sharp Cheddar cheese

2nd Layer:
3 eggs
⅛ tsp paprika
⅛ tsp garlic powder
⅛ tsp basil
⅛ tsp oregano
salt & pepper to taste
¾ cup biscuit mix
1¼ cup milk

Directions:
Directions:
Spray a 8" pan (pie or square) with nonstick cooking spray. Place all 1st Layer ingredients in bottom of pan in order listed.

In a small bowl, beat together all 2nd Layer ingredients. Pour over 1st layer. Bake at 400º for 30 minutes or until knife inserted in middle comes out clean.
