Chicken Breasts or Pork Loin, cut thin and/or pounded thin
Oil
Bread Crumbs
Panko
Parmesan cheese
Flour
Italian Seasonings
Garlic Powder
Egg

Directions:
Directions:
In a small bowl , beat eggs with a tablespoon of water. Set aside.
In another flat bowl or plate with a lip, add flour and seasonings.
In another bowl mix equal parts Panko and breadcrumbs add cheese.
Dip each cutlet into flour, egg then crumb mixture
Place breaded chicken on a tray or cookie sheet lined with parchment paper in layers (chicken then paper and repeat). Once all the chicken is on the tray cover with parchment paper, using a rolling pin, roll the chicken. this will help keep the breading on.
This can be refrigerated for several hours prior to frying.

Heat oil in large frying pan. Only do a few pieces at a time or the oil will cool.
Fry on medium heat until browned on both sides.
Add more oil as needed.
Drain on paper towels.
