2 T. salsa
2 T. low-fat ranch dressing
8 oz. lean ground beef
1 1/2 tsp. taco seasoning
2 (8-inch) reduced-carb, high fiber tortillas
2 slices reduced-fat American cheese, sliced in half
1/2 c. shredded iceberg lettuce
1/2 c. chopped tomato
1/4 c. chopped red onion

In a small bowl, whisk together the salsa and ranch dressing. Set aside. In a medium bowl, mix together beef and taco seasoning. Pat the meat into a circle 1-inch smaller than the tortilla and cut it in half (to make 2 half-moon shaped patties).
Spray a medium nonstick skillet with cooking spray and place over medium heat. Cook the burgers for about 3 minutes per side, or until just cooked through. Remove patties from pan and wipe the pan clean with a paper towel.
Return skillet to heat, place 1 tortilla in pan, and top one side of tortilla with half of the cheese. Place a burger on top of the cheese, and top with half of the lettuce, followed by the onion and tomato. Spread half of the dressing mixture on the empty side of the tortilla, lift it over the burger, pressing to close the tortilla, and remove it from pan (the cheese should be melted). Repeat with remaining ingredients.
