6 eggs, room temperature (can place eggs in warm water to speed process)
2 sticks butter – 1 salted and 1 unsalted
3 cups of chocolate chips or,
PREFERRED - 2 cups of chocolate chips and 7 tbsp. cocoa, 4 tbsp. butter and 7 tbsp. sugar

Melt the butter and chocolate chips/cocoa mixture in double boiler. Beat eggs for seven minutes until peaks. Once eggs have peaked, add the melted chocolate and pour into an 8” round pan sprayed with Pam. Line the bottom of pan with parchment or waxed paper and spray the paper.

Place the 8” round pan into another pan that contains hot water. Place both into oven. Note – don’t overfill the pan – put any extra into smaller custard bowls and bake in hot water.

Bake 375Ί for 30-40 minutes.
