Honey Balsamic Sheet Pan Chicken Recipe

Ingredients: 1/4 cup balsamic vinegar 6 Tbsp honey 2-3 Tbsp olive oil 2 tsp minced garlic 1 tsp dried thyme or basil 3/4 tsp dried rosemary 1/2 tsp red chili flakes 3/4 tsp Kosher salt 1/4 tsp pepper 2 LB boneless skinless chicken breasts, trimmed 1 1/2 lb baby red potatoes, quartered 1 pt cherry tomatoes 1 LB fresh green beans, ends trimmed and/or asparagus, trimmed ( I just used 1 lb fresh green beans, but you can use just asparagus, or you can do a half pound of each.)

Directions:1. Preheat oven to 425º. Combine balsamic vinegar, honey, 1 Tbsp olive oil, garlic, thyme/basil, rosemary, chili flakes, salt, and pepper in a small bowl. Stir to mix this marinade.. 2. Place chicken breasts in a resealable bag. Pour marinade over breasts. Seal and toss to coat. Marinate at least 30 minutes. (I did an hour). 3. Place potato quarters and cherry tomatoes on a sheet pan (four sided cookie sheet). Drizzle with remaining olive oil. Salt and pepper them. Stir. Bake for 25 minutes. Then bring sheet pan out of oven. 4. Place trimmed green beans and/or asparagus onto the potato and tomato mixture on sheet pan. Toss together. 5. Remove marinated chicken from bag, reserving remaining marinade. Place chicken evenly spaced atop of the potato, tomato, green bean mixture. 6. Pour remaining marinade from bag over the top of chicken and veggies. 7. Bake another 30-40 minutes. Baste chicken occasionally with the pan juices. 8. Let pan rest 5-10 min before serving. Spoon juices over top of each chicken breast or serve juices in a ladle at the table for people to drizzle on their own. |

Notes: This is a great recipe to make for an ailing friend. Just pack it up in one big pan and take it to them. Everything is in one pan and it tastes gourmet!!!! Of course, it's definitely good to keep for yourself too. Not many dishes to clean up afterwards.
