Pork loin or pork shoulder
Spices (your choice)
Olive oil
BBQ sauce (your choice)

Directions:
Directions:
A 3 or 4 burner works best for this recipe.

Rub olive oil all over meat; sprinkle spices on top side of meat.
Heat BBQ on high, turn off center flame, turn front and back burners to medium.
Place meat spice side down; sprinkle spices on other side, close lid and cook for 20 minutes. (place meat in center of grill where the burner has been turned off.)
After 20 minutes, coat meat with BBQ sauce and let cook for 1-2 minutes to set sauce. Turn meat over and coat other side with BBQ sauce; close lid.
Check for doneness every 5 minutes until pink. It will cook a bit more after removed from grill.
Serve with additional BBQ sauce if desired.
