1-1/2 c. sweet potato casserole
1 package (7-1/2 oz.) cornbread mix
1/2 c. milk
1 egg
1/4 v. vegetable oil

Directions:
Directions:
Preheat oven to 400º. Grease standard cupcake pans.

In bowl, combine sweet potato, egg, milk and dry cornbread mix; mix well; let sit.
Grease standard cupcake pans.
Add oil to batter, stir to mix well.
Put batter into prepared muffin tines; each cup should be about 1/2 full.
Bake in 400º oven for 15-20 minutes.
