4 T. butter
¼ cup chopped onion
1 cup chopped green pepper
1 cup sliced carrots
1 cup diced potato
1 pkg. frozen peas
5 T. flour
2 cans condensed chicken broth
3 cups sharp cheddar cheese; grated
2 cups milk
Salt to taste
Dash pepper
Croutons

Directions:
Cook vegetables in butter till tender crisp. Remove from heat and stir in flour and mix well. Cook for 1 minute. Add chicken broth and heat. Stir in cheese and heat until melted. Gradually add milk and seasonings. Heat through, but do not boil.
