1-1 1/2 lbs. fish fillets, 1/2"-3/4" thick
1/2 tsp each salt & pepper
1/2 c. water
1/2 c. dry white wine
3 Tbsp. butter
2 Tbsp. minced onion
3 Tbsp. flour
3/4 c. milk
1/2 tsp. dried oregano leaves
1/4 c. shredded cheddar cheese
Cayenne pepper to taste
lemon wedges for garnish, opt.

Directions:
Directions:
Sprinkle fish with salt & pepper. Place in greased 3 qt. baking dish. Pour the water & wine around the fish. Bake, uncovered, at 400 degrees for 10 min. or until fish is flakey. Pour off the liquid, reserving 1/4 c. Melt butter in a skillet, Saute the onion quickly. Stir in the flour. Cook and stir over moderate heat until golden. Whisk in the milk, oregano & reserved broth. Cook until sauce is thickened. Season with salt if desired. Pour sauce over fish. Sprinkle with cheese & cayenne pepper. Bake for 10-15 min. until sauce is bubbly. Serve hot from oven Garnish with lemon wedges if desired.
