"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

2-1/2 pkgs 8-oz cream cheese, room temperature (20 oz)
1/3 cup half & half
1/4 cup heavy cream
3/4 cup sugar
1-1/2 tsp vanilla
3 eggs
2 egg yolks
2-1/2 T dark rum

Don't overbeat. Stir in liquor. Pour batter into crust, sprinkle with nutmeg. Bake 45-50 minutes until crust is dry to the touch. Cool to room temperature, one hour. Loosen sides, remove springform.
