CRUST

1-1/2 to 1-3/4 graham crackers crushed
2-1/2 T butter, room temperature
2 T sugar

FILLING

2-1/2 pkgs 8-oz cream cheese, room temperature (20 oz)
1/3 cup half & half
1/4 cup heavy cream
3/4 cup sugar
1-1/2 tsp vanilla
3 eggs
2 egg yolks
2-1/2 T dark rum
1 T cognac or amaretto
Freshly grated nutmeg

Butter a 9-inch springform pan. Make a crust and pat 3/4 up the side. Chill thoroughly. Preheat oven to 350.

Beat cheese in bowl until VERY smooth. Gradually add cream and half & half, beating constantly. Add sugar and vanilla. Mix will be granular. Add eggs and egg yolks, one at a time, blending well. Don't overbeat. Stir in liquor. Pour batter into crust, sprinkle with nutmeg. Bake 45-50 minutes until crust is dry to the touch. Cool to room temperature, one hour. Loosen sides, remove springform. Refrigerate.
