3 1/2 lbs carrots
3 c sugar
1 T baking powder
1 T vanilla
1/4 c all purpose flour
6 eggs
1/2 c butter
powdered sugar
1 t cinnamon

Directions:
Directions:
Peel carrots cut into chunks and boil until extra soft. Drain well. Add sugar, baking powder, vanilla and cinnamon. Whip until mixture is smooth. Add flour and mix well. Beat eggs and add to carrot mixture. Blend well. Add soft butter and blend well. Pour mix into a 9x13 baking dish, about 1/2 full. Souffle will rise. Bake 350º for an hour or until top is golden brown. Sprinkle lightly with powdered sugar
