4 lbs skinless chicken pieces (white or dark)
2 onions
4 carrots
2 green peppers
1/4 c. Flour
1/2 c. orange juice
1/4 c. honey
1/4 c. soy sauce
1/4 c. tomato paste
4 minced garlic cloves
vegetable oil as needed
1 tbsp. corn starch
1/2 tbsp. salt
1/2 tbsp

Directions:
Wash the chicken and veggies separately.
Preheat the oven to 400º F
Prepare your veggies as follows:
Peel and cut the onions into quarters, peel and dice the carrots and cut the green peppers into 1 inch squares.
Place all the veggies in a 10" x 15" baking dish and bake in the oven for 15 min.
Meanwhile, mix flour, salt and pepper together and coat the chicken with the dry mix.
In a fry pan, brown each piece of chicken separately on both sides, by heating 1 tbsp of veg. oil (as needed) for about 8 to 10 min. Then, place the chicken on top of the cut veggies.
-In a clean bowl, whisk orange juice, honey, soy sauce, tomato paste, corn starch and garlic. Then, pour the mix onto the chicken and veggie pan.
Cover the dish and roast in the oven for 20 min.
Uncover and roast for another 20 min. (until chicken is golden and/or its juices run clear)

Enjoy plain or with a fried/white rice side dish!
